- 2 parboiled potatoes
- 1/2 lemon
- 1 teaspoon mustard
- 1 clove finely chopped garlic
- optional: 2 teaspoon olive oil
- lukewarm, filtered water
- himalayan salt
- pinch of pepper
Two parboiled potatoes grind in a blender with 1/2 of lemon juice, finely chopped garlic clove, add (optional: oil) or lukewarm water, a little pepper, salt.
Mix until a smooth mass as mayonnaise.
Pour into a small jar.
* It can be kept in the fridge for 5 to 7 days.
