Ingredients:
  • 2 cups of wheat
  • 115 gr walnuts
  • 200 gr almonds
  • 200 gr raisins (soaked)
  • 3 teaspoons dark rum
For chocolate topping:
  • 1 tablespoon cocoa powder
  • 1 teaspoon honey (or another sweetener)
  • 1 tablespoon water
Instructions:
Wheat and Nuts:
  1. Cook wheat. Separate from water. Ground wheat in a grinding machine. Ground nuts in the food processor. Add ground nuts and almonds. Leave raisins in water for about 15 minutes. Add raisins and rum. Put the nylon bag on your hand and make a compact mass. Pour into bowls for dessert. 

Chocolate topping:
  1. Make a chocolate of 1 tbsp cocoa powder, 1 teaspoon of honey and 1 tbsp water. Pour the chocolate over the dessert.

  2. Enjoy!

CHOCOLATE HALVA

Ingredients:
  • 200 grams of sesame seeds
  • 3 tablespoons of maple syrup (or other sweetener)
  • 2 tablespoons of organic raw cocoa powder
  • 3 or 4 medjool dates (soaked, peeled)
  • filtered water (if necessary)
Instructions:
  1. Grind sesame seeds in electric coffee grinder.

  2. Transfer sesame to food processor. Add 3 tablespoons of maple syrup and 2 tablespoons of cocoa powder and 3 or 4 medjool dates (soaked, peeled). 

  3. Mix in the food processor for a few minutes.

  4. Transfer the mixture into a large bowl, put nylon bags on your hands and make a compact mass. Add filtered water (not to much) if necessary.

  5. Put on a plate, cut into smaller pieces and serve.

  • 1 fresh beetroot
  • 1 large cup of medjool dates (peeled, soaked)
  • 1/2 cup of coconut (or more)
  • 1 handful of coconut (for rolling balls)
Instructions:
  1. Peel the beet with a peeler.

  2. Grate beet by hand.

  3. Transfer to the food processor and add peeled and soaked medjool dates.

  4. Add 1/2 cup of coconut. Mix about 3 minutes.

  5. Put nylon bags on hands, make balls and roll in coconut.

Recipe Notes:

* Approximately, you can make 12 beet balls.

CRUNCHY CHOCOLATE BUCKWHEAT BARS

Ingredients:
  • 1 cup of organic grain buckwheat
  • 1/4 cup sunflower butter
  • 1 cup of medjool dates
  • 1/2 cup chopped almonds
  • 1 teaspoon of rice milk (or other milk of your choice)
  • 1 tablespoon organic raw cocoa powder
  • 2 tablespoons pure dark maple syrup
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of coriander powder
  • filtered water
Instructions:
  1. 1 cup of buckwheat left in the water overnight.

  2. Next day, dry buckwheat from water in a dehydrator.
  3. Medjool dates let 1 hour in the water. Peel and clean medjool dates.
  4. Grind medjool dates in the food processor, add sunflower butter, rice milk, sea salt, coriander powder, cocoa powder, maple syrup, cinnamon. It should be thick.

  5. In the meantime, chop almonds.
  6. Extract the mass in a large bowl. Add buckwheat and chopped almonds.
  7. Put nylon bags on your hands and make compact mass. Add water if need (very little). If it does not, it is better not to add water. 

  8. Place in a baking sheet and leave in the fridge for one hour. Straighten with spatula. Cut the cubes and put in a dehydrator to dry (for several hours). More hours are better, because it is crunchy.

  9. Put raw homemade chocolate over the buckwheat bars and serve. To make chocolate see the *Notes.

Recipe Notes:

* Chocolate: 2 tablespoons raw organic cocoa powder with 1 tablespoon maple syrup. Add 1 tablespoon filtered water, if need.

* Also, for these cakes you can use a fridge, or dehydrator (but if you want to make crispy cakes it is necessary to use a dehydrator).
